Paleo Pancake Recipe

I’ve been playing with Paleo Pancake recipes for the last 6 months and even though I’ve made some great ones, I was never 100% satisfied, however I think I’ve finally nailed it down.

Ingredients

  • 2 Bananas, peeled
  • 2 eggs
  • 1/4 cup Almond Butter
  • 1 TBSP Coconut Flour
  • 1 tsp Cinnamon
  • 1 tsp Pure Vanilla Extract
  • Coconut Oil

Cooking Directions

  1. Place banana in a food processor and puree until smooth.
  2. Crack eggs into food processor, add almond butter, and mix together.
  3. Add Coconut Flour, Cinnamon and Vanilla
  4. Puree until smooth.
  5. Heat up a frying pan over medium heat. Once pan is hot, add a tablespoon of coconut oil and let it heat up/melt then pour around 4-5 tablespoons of the mixture into the pan. I made each pancake about 4 inches.
  6. Cook the pancakes until they start to bubble then flip them over. Keeping them smaller makes them flip easier.

Optional Topping

  • 1 cup of frozen berries
  • 1 TBSP of Maple Syrup
  1. Mix ingredients together in a bowl
  2. Microwave for 1 min 30 secs.
  3. Stir ingredients and pour over pancakes

  2. I prefer my almond butter on top not mixed in, but it’s all good. Love coconut pancakes.

  3. Mmm bananas in pancakes are my favorite lately! Mine usually come out more like a banana omelet, though, so I’m definitely going to try it with coconut butter and nut butter. Thanks!

    I do mine with 1 banana, 1/4 cashew butter and 1/4 cup unsweetened apple sauce. I haven’t tried the coconut flour in it but I’ll try that.
