Egg, Tomato & Avocado Delight

What you’ll need:

1 large organic free-range egg
½ Whole Wheat English Muffin
1/4  Avocado sliced
1/4 Tomato sliced
1 strip of turkey bacon
Salt & Pepper to taste

Cooking Instructions

I poach my eggs soft for mine, but you can fry them or cook them how you want.  Cook up a slice of turkey bacon. Toast your English muffin, slice your tomato into a large slice, and slice your avocado into a nice thick slice as well.

Once your English muffin is toasted to your liking, add the tomato, avocado, salt and pepper to taste and then set your egg on top of it.  And voila, a fast, easy and healthy breakfast.

This morning’s new creation took me less than 10 mins and has about 300 cals, 12g of fat (mostly from the avocado which are “good fats”), 17g carbs, 4g of fiber and 12g of protein.  Personally, I’d have two of these, but that’s just me.


  1. My hubby makes similar but scrambles his egg so he can nuke it in the microwave. Sometimes he adds a splash of hot sauce or salsa to the egg, too.
